If you need the fryer, we suggest you start it early in your session as it will take a while to heat the large volume of oil. Do not burn the oil by cranking up the thermostat above your final temperature. It will not achieve operating temperature any faster, but will only overheat and burn your food. Cooking oil breaks down at high temperatures and is very expensive to replace. Keep the temperature 375 degrees or less.
To start the fryer:
When you are done frying, turn the thermostat down, then open the front panel and turn the ignition to off. Also please turn off the gas supply via the yellow valve.
When you are done frying, hang the baskets outside the oil. Then please carefully lift the debris screen by the green handle straight upward. Place the screen on top of the baskets to drain. When filly drained of oil, empty the crumbs into a trash can and put the screen back into the oil for the next member. Aside from avoiding overheating the oil, frequent debris removal is the best way to prolong oil service life. Therefore if you have a long frying session, consider screening the oil occasionally betweeen batches.
If you notice the oil quality is degraded, please notify management for oil replacement.
You are not responsible for changing the fryer oil. Please NEVER open the oil drain valve.
After use, please wipe down the front of the unit to remove any oil drips or food particles.
