Dishes and Utensils

All dishes and utensils used in food preparation must be cleaned in the 3-bay sink in the rear dish area. Under no circumstances may the prep sink, handwashing sinks, or bathroom lavatories be used to clean any food preparation utensils.

You may temporarily place dirty pots, pans, utensils, and the like on the green epoxy wire shelf behind the LEFT (wash) side of the 3-bay sink as you are facing the sink. DO NOT place items on the floor or on the other wire shelves. Please DO NOT place items in the sink until you are ready to wash them as others may need the sink in the meantime. Please DO NOT stack dirty items at workstation other than your own as you will now have to clean and sanitize that area, and someone else may need it.

The middle and right-hand green epoxy wire shelves are for CLEAN dishes only. Leave items there to drip-dry after sanitization. When dry, please return utensils, pans, and other kitchen items to their proper storage area. Please promptly remove your personal items when clean and dry. You may leave them to dry after your kithen session, but please pick them up later that day. DO NOT leave items there between kitchen sessions as others will need the racks for their dishes.
